What's better than enjoying food from back home? Enjoying food from back home with new friends made in Australia, and realising that they enjoy it too! On this trip, we enjoyed dinner with a group of my friends. Food Ordering food at Kreta Ayer comes DIY fashion. Simply pick out the dish you want from the menu, write the number down and hand the order slip to your waiter. Bakuteh - This literally translates to "Meat Bone Tea". Bakuteh is pork bone (or sometimes chicken) soup simmered in an array of herbs (star anise, dang gui, cinnamon, cloves, ginger and fennel seeds). This is served normally with deep fried tofu and a side of You Tiao (deep fried dough). Garlic Kailan - Stir fried broccoli with garlic and ginger.Crunchy kailan in typical home-cooked fashion. Singaporeans celebrate National Day on 9 August each year. On 1965, 9 August, Singapore was booted out of the Malaysian Confederation and was declared independent. Many years of serious national building followed. In Australia, Australia Day (26 January) is normally celebrated with a BBQ. In the US, Independence Day (4 July) is celebrated with fireworks. Today, on Singapore's Golden Jubilee, Singaporeans celebrate in a myriad of ways. Here are the most common ones which most Singaporeans would do. 1. Hanging your Singapore Flag (Source: Chef Devagi Senmugam ) Singaporeans are encouraged to hang the Singapore Flag outside their homes between 1 and 31 August each year in celebration of National Day. Hard working and able men can build towers, roads, trains, public utilities and gardens. But it takes very special men to change the hearts and minds. Lee Kuan Yew's government did change Singapore from a third world slum to a first world bustling metropolis in a matter of 4 decades. But what is an even more notable feat is that they changed Singapore from a racially fragmented and class segregated country to a people believing that they can do what they are able to do no matter which colour they are or what their family background is. The death of Lee Kuan Yew has had a profound impact on many Singaporeans. Over the last week, we have seen the tens of thousand queuing to attend the laying in state and the events held in neighbourhoods. We've seen the normally reserved Singaporeans cry, posted on Facebook and even publically shout out their emotions. Mr Lee's death has also impacted on Singaporeans and ex-Singaporeans living abroad. In Sydney, Australia, many Singaporeans have followed Facebook and live streaming through Channel News Asia on news and historical videos of Mr Lee's life.  Living abroad, we don't often talk to each other about our origins particularly at work. He has been closely linked to the success of Singapore, turning a third world nation to a first world nation. As a health management professional, my work experience has shown me that good leadership can bring great achievements. But good leadership alone is not enough, you need a great team. For example, when a patient comes to hospital with a serious fracture, the doctor alone can't treat the patient successfully. Yes, he can lead the team to treat the patient, but he needs the whole team to work with him. He needs the anesthetist to administer the general anesthetic; he needs the nurse to care for the patient while in the ward; he needs the physiotherapist to help rehabilitate the patient to full movement; he needs the clerks to help fill in the administrative paperwork; he needs the nurse manager to make sure the hospital is well stocked. Former Prime Minister of Singapore, Mr Lee Kuan Yew, passed away on 23 March 2015. Formal messages of condolences has been sent from leaders around the world. Here is a snap shot. (Video from Straits Times) You might have seen the videos and pictures of people in Singapore queuing up to attend the laying in state of the first Prime Minister Lee Kuan Yew. This public viewing is held from Wednesday 25 March to Saturday 28 March 2015. (Photo from Channel News Asia) People have turned up in the thousands. The queue on Wednesday was about 1.8 km long, which translated into 8 hours of queuing. To put this into Sydney terms, it's a queue as long as from World Square to Circular Quay. This queue is in over 30'C heat and the government has issued messages to encourage people to  come prepared with water and umbrellas. (Note that in Singapore, umbrellas are used both as shelter in rain and shine). A second queue had been made for the elderly, disabled and pregnant. On the day LKY passed away, my non-Singaporean friend asked me, "Who is Lee Kuan Yew to you?" I stopped to have a serious think and said to him, "Just imagine the Prime Minister/ President of your country when you were in Kindergarten. And next imagine that he/ she is still the Prime Minister/ President today." My friend was taken aback. He shook his head, "I can't imagine that at all." I said to him, "That's who Lee Kuan Yew is to me. The Prime Minister of Singapore for a very long time. And a man who is really good at his job." I decided to share this table which I created of major world leaders who were in power while Lee Kuan Yew was the Prime Minister of Singapore. It's National Day in Singapore today (9 August 2014). As a Singaporean living abroad, it does seem like a day to reflect where I grew up. And for many other Singaporeans abroad, it's a day of thinking about their family far away back to a place where they call "home". One of the things distinct about growing up in Singapore is definitely the National Day celebrations both at school the day before (Yay to half day and no classes!) and on the day itself. Most of us would be glued to the TV watching the National Day Parade (NDP). Most of us too would have been at a NDP or it's rehearsal at least once with our school. There's always that amazing once a year firework display at the NDP.  And there is always the singing of patriotic songs, which we all started learning at nursery!
