COVID-19 Stay at Home Day 10: Garlic Oil Speghetti with Chicken

Day 10. The COVID-19 situation is somewhat stabalising in NSW. Some of my colleagues are suspecting that this is calm before the storm when the really sick patients start to come in. The suspicion is that the really ill from the cruise ships would be coming in next. Let's pray that the folks who are ill stay on a mild course of the disease progression and not towards the worser outcomes.

My recipe today is dedicated to all my fellow colleagues working in health. Not just all the doctors, nurses and allied health staff, but to the many many people in health working behind the scenes. The admin staff busy collecting and sorting patient information. The cooks who help prepare each patient meal. The cleaners who ensure the infection doesn't spread all around. The storekeepers who help maintain our stock of personal protective equipment. The education staff who make sure we know what to do and how to do what we need to do. The IT staff who make sure all our digital infrastructure is working. The management staff who help co-ordinate all of us around. And to anyone else who I may have missed, thank you too for helping play a vital role in our big team!

This recipe today is a hearty yet very simple one. Fairly easy to prepare after a long day at work.


Garlic Oil Speghetti with Chicken


Ingredients

1 piece chicken thigh
2 serves of speghetti
1 teaspoon salt
1 teaspoon + 2 tablespoon of crushed garlic
Grated parmesan cheese

Marinade Sauce
2 teaspoon soy sauce
2 teaspoon wine (Chinese cooking wine or Mirin or Cooking sake or sherry)
1 teaspoon corn flour
Crushed pepper

Method

1) Cut up chicken thigh into thin strips and marinate in marinade sauce for at least 30 minutes. (You can do this a day before and marinade in the fridge overnight.)
2) To a pot of boiling water, add in speghetti and 1 teaspoon of salt. Follow the instructions in the packaging of the speghetti on how long you should be cooking it for.
3) When the speghetti is cooked, drain away the water.
These steps can be done while the speghetti is cooking.
4) Heat up pan and add 1 tablespoon of oil.
5) Add 1 teaspoon crushed garlic and fry till fragrant.
6) Add in chicken fry till both sides are brown.
7) Remove the chicken from the pan. Do not clean this pan.
8) To the same pan, add in 3 tablespoon of cooking oil and turn the heat to low.
9) Add in 2 tablespoon of crushed garlic into the pan.
10) Slowly allow the flavour of the garlic to infuse into the oil. This should take 3-4 minutes.
11) When the speghetti is cooked, transfer it into the pan of garlic oil.
12) Add in 2 tablespoon of shaved parmaean cheese.
13) Toss the speghetti in the pan for 30 seconds.
14) Serve the speghetti by first placing a serve in a bowl, adding the chicken on top and add more parmesan.
15) Add salt and pepper to taste.
